Last night Sketchy made crazy awesome grilled cheese sandwiches on ciabatta bread.
Tonight we made a couple different dishes with morning star soy crumbles. We did a play on shepherd's pie and a pasta thing because i couldn't decide which one i wanted and figured it wouldn't hurt to have variety and extra for lunch tomorrow!
The sheperd's pie thing was just really a casserole with a layer of mashed potatoes, the crumbles, corn and cheese with some crushed up jalepeno chips on top instead of breadcrumbs.
the pasta was rotini with cream of celery sauce with crumbles and cheddar cheese.
We ate, i fell into a food coma and passed out around 9 while sketchy stayed up and watched the entirety of the seahawks/cardinals game. Before falling asleep (and when i thought i'd be awake for the whole game) i put in feely (the cardinal's kicker) to have a dog in the fight. that ended up being a pretty good move much to sketchy's surprise. he kept telling me it was a stupid move.
Sleep has been my best friend lately. My sleep schedule is so telling of my life stress level. My insomnia is directly related to when i have one or multiple things on my mind that are eating at me. Once i actually take steps to fix my issues instead of quietly dwelling on them in the middle of the night, my insomnia is instantaneously fixed.
Addressing issues is sometimes difficult and can sometimes cause even more concern when you're not sure how it's going to go, but in the end i find that things usually work themselves out. Addressing something is always better than letting it keep you up at night. And if you're lucky, you might just fix your life.
Besides sleeping like a happy baby, i'm also super excited for this awesome weather that's starting to hit and all the fall and winter activities coming up. =)
